Windows Updates for programs not on my computer

Anyone have any idea? All of a sudden I'm getting updates for Bing and
Windows Live Essentials. They are not in Program Files and not in
Installed Programs. Is this something that Windows has snuck in on the
sly?

Why would MS sneak in anything? If it's there, then you had something to
do with it.

Are they optional updates ?

Is Windows Update configured for Microsoft updates ?
- if so you agreed to receive them by allowing MU to check for them

Go to Windows Update > Change settings > there is a box for extra
software or something like that. I unchecked it so will wait for next
updates to see if it worked.

Unchecking that option (note the category for that option is Microsoft Update) will also restrict the ability to get updates
(program and security) for other installed MSFT products/applications (e.g. Office)

I got Bing desktop and declined to install it and hid it from my view.
I thought they were supposed to push out Skype as well.
