For dinner parties it is very important that the eggs not expand to
break the shell. My method....
1/ Buy one doz small eggs.
2/ Place them all, gently, into a saucepan and cover with cold water.
3/ Slowly bring to the boil, then turn off the heat, and place
everything in the refrigerator.
4/ Just before the guests arrive remove the shells and sprinkle with
chopped parsley.
