I installed EssentialPIM on my computer, but don't use it mainly because it
also installed itself as my default e-mail application, which I don't want it
to be, and I'm not sure how to undo that.

If you don't want to keep it, uninstall it. To make sure it's completely
gone use Revo Uninstaller*(free).

What was your former default e-mail client? Start it, somewhere in the
preferences/options menus you should find a "make this the default"
check box.

Just a guess, but try typing 'default programs' into the box after
clicking on the Start Orb. On the applet that opens, click the last
link, "Set program access and computer defaults." You should be able
to specify your default email app there, along with other defaults.
