Is there an easy way to edit a screenshot so I can do the fractions
and brackets without just drawing with the line tool?

LibreOffice math fonts perhaps ? Some word processors have
excellent math font options, and can make publication quality
looking equations. This is at least a start at it, but might
not be the best one.

Make the equations you want, have the look you want in Libreoffice,
then screenshot the thing, and paste in the nice looking equation.
