Is there a reasonably easy way to put text into an icon for
a shortcut instead of a graphic. Text that would be large
enough to actually read?

Something like, "GTR", or "UCDB".

Depends on what you mean by easy.
You could use irfanview to create a new 32x32 pixel image,
insert (say) "UCDB" as text then use Save As to save in
ICO format.
