Win 7 not saving display settings.

Installed Ultimate about a week ago and so far love it (been using
98, 2K and XP on this box). There is one thing that is annoying me.
I have only 1 display and Win7 thinks I have two! I change it back
to 1 in display properites but when I reboot, it goes back to two!
Sometimes I will accidentially move a program off screen and it's a
pain to get it back. How can I get windows to remember my display
settings?

Is there a separate configuration program provided by the video card maker?
Maybe that is configured for two monitors, and thereby confuses Windows.
