After relocating the My Documents data onto the separate data partition using these helpful instructions

Change location of My Documents Folder

I'd really like to ensure that all my application data is stored on the data partition also. I'm thinking of Thunderbird Mail for example, and frankly any new app that I load, which always seems to default to keeping its data on the drive the program is installed to.

Any ideas please? Thanks

I don't think that's possible... Unless you've already seen it happen.
Sorry iscotter, I'm out of ideas.

If I'm right, that would mean that every single application would have to get it's data on the other partition, which isn't really possible or good performance-wise.
The clossest you can get, is by installing on the second partition. You can normally choose where to install during the setup of apps, so at that point, chooe the second partition, and that should install there.
