I don't like it because it always wears out, despite the best care (using wooden or plastic spatulas/tongs). Before buying our last cookware set (in 1996), we went through at least two sets of these. I would think that the finish is baked on.

I've found that the cookware sets made of T304 surgical steel to be the best, but they're expensive. The set that we have cost $1,300 in '96. However, they have a unconditional lifetime warranty.

I'm not sure, but I think it's for the same reason that we park on a driveway and drive on a parkway, and also why we call structures that are already done being built "buildings."
